Baked Potato Casserole


8-10 Potatoes, red or brown, peeled and cubed
1 lb Velveeta, cubed
1 to 1-1/2 c Mayonnaise
3-4 Green Onions, chopped
1 package Bacon Bits
Preheat oven to 350 degrees. Boil cubed potatoes until perfectly tender. Drain and set aside. Add cooked potatoes to large mixing bowl. Combine mayonnaise and cheese. Stir in green onions, reserving a few for garnish. Spray a casserole dish with non-stick cooking spray. Add potato mix and spread evenly. Top with bacon bits, extra green onions, and any other preferred toppings. Bake covered 30 minutes. Remove cover and bake another 10-15 minutes. Serve warm.
